Christmas is on its way, and with it come dinners with family, friends, and colleagues. At a time of greater excess, take advantage of this festive season to awaken your creativity in the kitchen and create healthier and more sustainable options to offer.
Ingredients for the jar
- 1 cup oat flour
- 1 cup chickpea flour
- 1 cup buckwheat flour
- 60 g chopped pistachios
- 1 cup whole wheat flour
- 3 tablespoons mixed herbs (e.g. oregano, rosemary and thyme)
Ingredients for the jar
- Reuse a glass jar and add the ingredients in layers.
- Close the jar and decorate it as desired with reusable materials to give as a Christmas gift.
- Write or print the instructions for finishing the focaccia recipe on a pretty card and attach it to the jar with a decorative ribbon.
Ingredients for focaccia
- 10 g baker’s yeast
- 1 pinch of salt
- 3 tablespoons olive oil
- olives to taste
- cherry tomatoes to taste
- fresh basil leaves to taste
- salt to taste
- oregano to taste
- rosemary to taste
Ingredients for pistachio and herb focaccia
- Dissolve the baker’s yeast in a bowl with a little warm water, 1 pinch of salt and the olive oil. Leave to rest for about 10 minutes.
- Place the contents of the jar in a bowl and make a small opening in the centre. Add the previous mixture and mix all the ingredients well.
- Shape the dough into a ball. Cover with a cloth and leave to rise for about 1 hour or until the dough doubles in size.
- Roll out the dough to the desired shape and place it on a baking tray lined with baking paper.
- Add pitted olives, cherry tomatoes and fresh basil leaves to decorate. Finally, sprinkle with a little salt, oregano and rosemary.
- Bake at 180 ºC for about 30 minutes. Bon appétit!
