Chia and coffee pudding

Ingredients for 4 portions:

  • 12 tablespoons of chia seeds
  • 250g solid natural yoghurt (alternatively you can use vegetable yoghurt made from soya or coconut)
  • 450ml almond vegetable drink
  • 2 tablespoons cocoa powder
  • 2 tablespoons of coffee (espresso or instant)
  • 2 tablespoons of honey
  • 4 tablespoons of granola (or oat flakes)

Method of preparation:

  1. Mix the chia seeds with the almond vegetable drink, yoghurt and honey. Set aside in the fridge for about 4 hours.
  2. After this time, remove from the fridge and divide half of the previous chia pudding into a bowl and mix with the coffee and cocoa powder.
  3. Arrange the chia pudding and the previous mixture in small bowls in layers.
  4. Add granola as a topping and serve.
