Chicken cubes in honey and ginger sauce with coriander rice

Ingredients for 4 persons

For the steaks:

  • 6 chicken steaks
  • 3 tablespoons honey
  • 10g ginger
  • 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 cloves garlic
  • Pepper to taste

For the coriander rice:

  • 280g needle rice
  • ½ onion
  • 1 clove of garlic
  • 1 dessert spoon olive oil
  • 1 teaspoon salt
  • Coriander to taste

How to prepare

For the chicken cubes:

  1. Cut the chicken steaks into cubes and season with salt, pepper and chopped garlic.
  2. Whisk together half the amount of olive oil, the lime juice, grated ginger and honey in a bowl.
  3. Drizzle the chicken cubes with the previous mixture and leave to marinate.
  4. In a frying pan with olive oil, I sautéed the chicken cubes with the previous marinade until cooked through.

For the coriander rice:

  1. Chop the onion and garlic and sauté in olive oil.
  2. Add the water and, when it comes to the boil, add the rice and season with salt.
  3. Sprinkle with chopped coriander and serve.
