Coffee and plum cake

Ingredients:

  • 100g oatmeal
  • 100g wheat flour
  • 100ml semi-skimmed milk
  • 2 tablespoons cocoa powder
  • 80g sugar
  • 4 eggs
  • 1 espresso coffee
  • 12 prunes (alternatively you can use: dates or dried apricots)
  • 1 dessertspoon baking powder

Method of preparation:

  1. In a blender, add the eggs, sugar, coffee, cocoa and milk. Blend until the mixture is smooth.
  2. Add the plums and mash again.
  3. In a bowl, combine the previous mixture with the wheat flour, oatmeal and yeast.
  4. Preheat the oven to 180ºC. Bake the dough in a non-stick tin for about 35 minutes. Check it’s done with a toothpick.
  5. Decorate with sprinkled sugar.
