For the dough:

150g pumpkin

80g brown sugar

60ml low-fat milk

150g unleavened flour

2 eggs

1 tablespoon apple cider vinegar

1 teaspoon baking powder

1 teaspoon cinnamon powder

1 teaspoon ginger powder
For the topping:

80g wholemeal oat flakes
-
10ml olive oil
-
2 tablespoons honey
Method of preparation:
Dough:

Boil the pumpkin in water. Drain and mash.

Mix the pumpkin, brown sugar, milk, apple cider vinegar and beaten eggs in a bowl. Set aside.

In another bowl, mix the flour, baking powder and spices.

Combine the two mixtures and coat well.
Topping:
- Add the oats, olive oil and cinnamon to a bowl. Mix together.
- Place the mixture on top of the muffin batter.
- Bake for about 20 minutes until cooked through.
