Pumpkin muffins

For the dough:

  • 150g pumpkin

  • 80g brown sugar

  • 60ml low-fat milk

  • 150g unleavened flour

  • 2 eggs

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon powder

  • 1 teaspoon ginger powder

     

 

For the topping:

  • 80g wholemeal oat flakes

  • 10ml olive oil

  • 2 tablespoons honey

Method of preparation:

Dough:

  • Boil the pumpkin in water. Drain and mash.

  • Mix the pumpkin, brown sugar, milk, apple cider vinegar and beaten eggs in a bowl. Set aside.

  • In another bowl, mix the flour, baking powder and spices.

  • Combine the two mixtures and coat well.

Topping:

  • Add the oats, olive oil and cinnamon to a bowl. Mix together.
  • Place the mixture on top of the muffin batter.
  • Bake for about 20 minutes until cooked through.
